Ingredients
- 250g Perfect Italiano Perfect Pizza Cheese
- 2 tbsp olive oil
- 600 grams Idaho potatoes
- 3-4 slices Fresh chicken fillet (cut into bite sized pieces)
- 3 eggs - beaten
- 4 vine-ripened tomatoes, sliced
- Pepper & salt to taste
- Fresh Italian parsley, finely chopped
- Softened Anchor butter (for brushing)
Steps
- Boil potatoes for 15 mins in Visions casserole and soak in ice water to cool down, peel the skin and then slice about 1cm thickness and spread evenly on a Pyrex Bake dish, before that brush some Anchor butter
- Preheat oven 180 degrees Celsius
- In a Corningware Plasma Saute pan, add oil, stir fry chicken, pepper & salt mix with potatoes
- Mix Perfect Italiano Perfect Pizza cheese and eggs in bowl
- Pour egg & cheese mixture over potatoes & chicken, place tomatoes on top
- Bake for 20-25 mins
- Sprinkle parsley and serve on Corelle plate
