Crispy Salami, Tomato and Pine Nut Salad

Ingredients

  • 100g sliced salami, cut into strips
  • ¼ cup pine nuts
  • 150g rocket leaves
  • ½ cup shaved Perfect Italiano™ Parmesan
  • ½ cup semi-dried tomatoes
  • ½ cup pitted kalamata olives
  • 1/3 cup balsamic dressing
  • toasted Ciabatta to serve

 

Method

  1. Pan fry salami and pine nuts, drain. Toss with rocket, parmesan, semi-dried tomatoes, olives, and balsamic dressing.
  2. Serve with toasted Ciabatta.
